Facts about the still:
- 40 foot tall continuous column made by Vendome Copper and Brass from Louisville Kentucky. http://vendomecopper.com
- Materials used in the column are copper with stainless steel.
- Feed rate: 15 gallons per minute of Distiller’s Wash (8% ABV fermented mash made from cereal grains including corn, malted barley and wheat)
- Wash is feed in towards the top of the column and heated by steam entering the base which vaporizes the alcohol to the top of the column where it is then cooled to liquid
- The liquid is then redistilled in the “Doubler” which is a second copper still that raises the proof from 100 out of the column to 140.
- The clear distillate is produced at about 1.5 gallons per minute at 140 proof
- After the distillate is made from the second distillation from the Doubler it is pumped to a holding tank.
- The tank is blended to a proof between 117-125 with Reverse Osmosis water and send to mature in new virgin American Oak, heavy char barrels.
- The Devil’s Share Whiskey is then aged for 4 years and bottled after proofing to 92 proof with Reverse Osmosis water.
If people don’t know, these are the same folks who founded Ballast Point Brewery before they sold it to Constellation Beverage a few years ago for a billion dollars. They are remarkable folks at anticipating and feeding the “next big thing” which is now small batch spirits. Not only were they successful, but they led the charge in making San Diego the micro-brew capital of the world. Now they are forging the way for even a newer industry.
